Wild garlic is a wild vegetable that grows in deciduous forests and is related to chives, onions and garlic. When in season, it is a good idea to harvest and process this versatile ingredient.
First, wash the freshly picked wild garlic thoroughly. Then dry it as well as possible (a salad spinner can help if necessary).
Now you can chop the wild garlic with a knife or finely chop it. If you have a meat grinder, you can also grind the wild garlic through the smallest slice.
Briefly roast the sunflower seeds in a pan until they get a little color.
In the next step, put the chopped wild garlic, the roasted sunflower seeds, the sunflower oil, salt and pepper into a suitable container and puree everything with a hand blender until it is nice and fine and cohesive. Your wild garlic pesto is ready.
